If you are a lover of strawberry butter, you will know its quite expensive from the store.
Making yours at home is a great ideal, the homemade version is much better as you will have total control over what goes into them.
Serving size is about 2 tablespoons.
2 1/4 cups regular unsweetened shredded coconut(organic brand is better).
1 1/4 cups fresh sweet strawberries, hulled and halved.
1 tsp vanilla or almond extract.
2 tbsp maple syrup or raw honey.
Place the shredded coconut in a food processor and process by pulsing until powdery.
Add in your fresh strawberries, vanilla extract and maple syrup and blend until smooth.
Taste test and adjust the sweetness factor by adding a bit more maple syrup or raw honey as you desire.
Enjoy with your favourite fruits as a dip.
