This insanely versatile vegetable is a great deal, simply roasting it up and too in a quick homemade cheese sauce.
The end result is creamy and delicious comfort food, with way fewer carbohydrates than other cheesy mac.
Remember, one of the positive changes in our health is to start with the oils we use daily.
It is better to cut off out all refined oils except extra-virgin olive oil.
When cooking, frying or sauteing, use unrefined coconut oil, avocado oil or ghee, they are healthy.
Ingredients for 4 servings.
Preheat your oven to 200 C/ 400 F.
In a large bowl, thoroughly stir the cauliflower florets with your oil and season with a pinch of salt and pepper.
On a large flat rimmed baking sheet, covered with parchment paper, arrange your cauliflower florets in a single layer. Roast them in your preheated oven for 12-15 minutes, or until they are golden on the sides.
Add your choice of milk and flour to a saucepan, whisk really well until incorporated.
Heat this over medium-low heat and stir in the cheese, garlic powder, onion powder, salt and pepper.
Stir constantly to avoid cheese sticking and burning to the bottom of the pan, cook just until you get a smooth thick sauce.
Remove from the heat. Pour your cheese sauce over the roasted cauliflower and toast to coat.
Sprinkle with parsley and crumbled bacon.
