Oat flour is the simplest flour to take and doesn’t take much time.
2 cups of whole rolled oats equal to a cup of oat flour or more, depending on how finely you grind it.
Also, the sweetness factor depends on individuals, so you may want to use more or less maple syrup or honey.
Ingredients for 6 servings.
1 3/4 oat flour or ground oats.
2 tsp baking powder
1/2 tsp sea salt
1/4 tsp cinnamon (optional)
1/2 cup unsweetened coconut, almond or cashew milk.
1/4 cup melted unrefined coconut oil.
2 large eggs.
3 tbsp raw honey or maple syrup.
Preheat your waffle iron.
Combine by whisking together, your oat flour, baking powder, sea salt and cinnamon in a large mixing bowl, set aside.
In another mixing bowl, whisk together milk, coconut oil, eggs, honey and vanilla extract, whisk until mixture is creamy.
Next, make a well in your dry ingredients.
Pour your liquid mixture into the well and gently stir until all the ingredients are well combined.
Let the batter stand at room temperature for about 10 minutes. Ladle about 1/2 cup of the prepared batter into your preheated waffle iron.
Cook the waffles until golden and crisp, about 2-3 minutes. Garnish with fresh berries and serve immediately with honey or maple syrup.
