Ingredients For 3 Servings.
1 cup unsweetened Greek yoghurt.
3 tbsp raw honey
1 tsp vanilla extract
1/2 cup fresh pineapple, blended
1/4 cup fresh pineapple, chopped for garnish
1/2 cup mixed berries
Fresh mint to garnish.
Place 1/2 cup pineapple, vanilla extract and honey in a food processor and pulse for about 2 minutes, until you have a smooth puree.
Mix the puree with yoghurt.
Pour your yoghurt parfait in wine or dessert glasses, add chopped pineapple, berries and garnish with mint as shown below.
